Processing from start to finish
We lead this issue with a processing feature, looking at how
to ensure good, clean evisceration at the poultry processing
plant. Nobody wants a dirty carcass, it is neither good for
health nor profits, and we present 10 tips to help ensure that
evisceration occurs as cleanly and efficiently as possible.
We then move to look at the importance of aligning with expectations to keep consumers happy. We look at marketing to the
Hispanic community in the U.S. and how Spain's largest cage-free egg producer
may be ahead of the curve where changing consumer attitudes are concerned.
There is a strong egg flavor to this issue, be it in the benefits of properly controlling ventilation, controlling egg size or how chicken meat
and egg producers should take advantage of the difficulties in the Asian
pork industry to promote their products as healthy, plentiful, and affordable sources of animal protein to those who may have difficulties in accessing what for many has traditionally been their favorite meat.

While Asia's pig producers may be suffering from disease issues, the
poultry industry is all too familiar with the difficulties that diseases
can bring, and we look at work being carried out in the U.K. to produce
chickens able to resist the avian influenza virus. Commercial production
may still be some time away, but the first genetically modified chicks
resistant to the virus are expected to hatch next year.
If these birds become a commercial reality, they will certainly further add to the sustainability of an industry that already has a good
sustainability profile. There is a lot of talk about what sustainability is,
which does not always reflect reality, so we take a look at what, exactly,
science has to say about the matter.
Just as we started the issue, so we finish, returning to the poultry
processing plant, for our second feature, where we look more broadly at
minimizing rejects. ■
